These were yummy Strawberry Shortcake Cupcakes, they're so super easy, fun and delicious. Take your favorite shortcake or vanilla cake recipe and fill your cupcake baking cup 1/3 to 1/2 of the way full. (When they bake they will rise) Take strawberries and cut them into small bite-size pieces and add sugar. Once the strawberries have made a syrup and set, scoop some onto the top of your cooled cupcakes. Take whipped cream (Home made is best, but store-bought works too) and pipe (Or scoop) a nice swirl, or dollop on top. Make sure that your strawberries are below the top of the baking cup, so that they don't spill over the sides. You can substitute the fruit for any of your favorite fruits: Blueberries, Peaches, Raspberries, etc... You can also make these Gluten-Free by changing your cupcake recipe into a gluten free cupcake recipe.
